PASTRY : Water - 1 glass
Egg - 1
Salt - 1/2 tsp
Flour - 1 cup
FILLING :
Potatoes - 2-3 middle size.
Onion - 1-2 middle size
Vegetable oil - 2-3 tbsp.
What you buy in Canada and the USA with the name Pierogies on the plastic bag, actually is a Polish name for this kind of dumplings. The Ukrainians call it varenyky and the word ‘pierogi’ is used in Poland.
How to make Ukrainian VARENYKY ( Polish Pierogies)
Mix water, egg and salt in a glass.
Add the mixture in flour in a bowl.
Knead the pastry.
Cover it with another big bowl and leave for 30 minutes.
Meanwhile, make mashed potatoes, adding butter, salt, milk( or cream) and fried onion to boiled potato.

Раскатайте тесто в тонкий слой, разделите на 2 части и сделайте колбаску, нарежьте ее шириной пол дюйма и раскатайте круглешками.
Положите начинку на середину круглешла и слепите вареники.

Roll out the dough into a thin layer, divide into 2 parts and make a sausage, cut it half an inch wide and roll it into rounds.
