Ukrainian breakfast - crispy buckwheat with eggs

Today I’m going to introduce you to buckwheat. Buckwheat is very common for Ukraine and I thoroughly enjoy the taste of it. It’s Low FODMAP and naturally gluten free. Also it’s a rare plant-based source of nine essential amino acids.
🛒 You’ll need

✔️brown buckwheat - 3 tbsp (50 g)
✔️water
✔️salt
✔️2 eggs
✔️olive oil
✔️veggies for salad

1️⃣Wash buckwheat. Put it in a pot and pour enough water to cover it
2️⃣Boil buckwheat for 15 minutes
3️⃣Preheat the pan and add splash of olive oil. Put cooked buckwheat on the pan
4️⃣When getting crispier crack 2 eggs on the pan
5️⃣Fry until eggs are ready and buckwheat is getting crispier. Buckwheat will taste like 🍿
6️⃣Add your favourite veggies
